8 Eggs
2 14oz. Cans of Condensed Milk
2 12oz. Cans of Evaporated
2 tbs. of vanilla extract
1 cup of sugar
In a large bowl beat eggs. Add in 2 cans of Condensed Milk. Then add
the 2 cans of evaporated milk. Mix well. Add 2 tbs. of vanilla extract.
In a metal skillet caramelize 1 cup of sugar until dark brown. Do not
burn. Pour caramelized sugar into a solid tube pan making sure that
you are wearing oven mitts, coating the tube pan on the bottom and sides.
The sugar is very hot and can burn if not careful. Then pour the
mixture of milk and eggs into mold pan.
Pre-heat oven to 350 degrees. Place a 12x14 baking pan on the oven
rack. Then place tube pan with mixture in the baking pan. Next pour
water into the baking pan to about 1/2 inch from the top. Slide rack into
oven carefully and bake for about 45 min. to 1 hour. Test for doness
by inserting a butter knife closest to the tube until it comes out dry.
When done take tube pan out of water an place on rack to cool for about
1/2 hour. Next place tube pan in the refrigerator for at least 4 to 5
hours to allow mixture to chill and set. When ready to serve run
butter knife around the edge to loosen then take a serving dish that is
larger around than tube pan. Place on top and over the sink invert the
tube pan. Flan will slide out onto serving dish. You can scrape some of
the caramelized sugar from the pan to drizzle over the flan. Cut and
serve in wedges. ENJOY
