A REAL KITCHEN FOR A REAL COOK

Recipe: Peanut Butter Pie
 

 
1"  baked pie shell                    1/8 tsp. salt
1/2 cup peanut butter                 3 cups of milk
3/4 cup powdered sugar             3 egg yolks, slighly beaten
1/2 cup granulated sugar            1 tlbs. butter
3 tlbs. cornstarch                       1 tsp. vanilla
3 tlbs. flour
 
Blend 1/2 cup of peanut butter and powdered sugar until mealy. Sprinkle 2/3 of it in baked pie shell. Combine sugar, cornstarch, flour, salt, milk, and eggs.  Cook until thick.  Add butter and vanilla.  Let cool and pour into shell.  Top with meringue.  Sprinkle the rest of the crumb mixture on top and brown in 350 over for approximately 15 minutes.
 
Meringue
 
3 egg whites                           1/2 tsp. vanilla
1/4 tsp. cream of tarter             1 tlbs. cornstarch
1 tlbs. cold water                      6 tlbs. sugar
 
Beat egg whites, cream of tarter and water until frothy.  Add sugar while continuring to beat until stiff.  Add vanilla and cornstarch.  Beat until stiff and shiny.
